I just got my heat treat oven this week, and have some AEB-L to play with and am pretty confident I will be able to do a good job on it. On the other hand I have two knives I cut out of S35VN that I was going to send for heat treat. I am set up for sub zero, but not cryo. Is cryo critical for S35VN?

If you can do AEB-L you can do S35VN. The only difference between dry ice and LN is that the LN forms ETA carbides and dry ice doesn't. The main reason for doing any kind of cold treatment is to reduce RA and dry ice will do that on pretty much any steel we use.

If you HT properly , including LN you'll get IMHO one of the best blades. !
