Handmade in the USA, this Heavy Chef's knife has a 6.875" cutting edge, measures 12" in total length and is 1 3/4" at it's widest point. The blade is 1/8" thick 154CM Stainless steel from Crucible Industries, professionally heat-treated to Rockwell 59-60, including cryo treatment to -300°. The blade has a slight convex grind (not quite flat) and the edge is polished and razor sharp. The body of the blade has a deep bead-blasted finish. Fine grind marks are visible on the bevel giving it a hand-made look. The handle is Linen Micarta and is fastened with hollow stainless steel pins. The handle measures 4.875"L x 1"W x .625"H. My maker's mark, a "K" for Kaiser, is stamped on the blade. This knife was designed for heavy cutting and chopping in the kitchen and in the field. Looks Great ! I have 2 similar knives that the makers called a "Santuko", although i do not know close the pattern is to a 'real' Santuko.
It is about the most useful design of all for kitchen use.
This looks like a great score for someone who does not already have a custom knife of this pattern.
