I don't think it's ridiculous at all. In fact, I'm glad you said it first, because I was going to say that the best 400 dollar slicer is 25 Opinels.
 
If Umnum is too large how about an XM-18 in 3"? They can be had for about $600 and non flipper is certainly possible.

25 Opinels, or one of basically every model they offer. Talk about variety!
 
Another vote for a full custom!
But....you could save a lot by just getting an insingo Sebenza! They are great slicers and since you already like your regular one it suits you
 
Many options. Just looking through whats laying around me, my top recommednation is Tim gaylean Large Lahar. Superb knife. Check out the youtube reviews, makes a nice slicer.

Kerin isnt doing regrinds at the momemnt (emailed him last week :( ). Was actually looking to get my xm reground and a fuel ignite flipper.
 
You might want to check out a Rockstead folder. Just google Rockstead knives. They look like cutting machines, there's an impressive video on the site and I remember seeing the cutting demo at a knife show. They are very expensive and not for everyone. The blades are around 65 RC.

I agree with this. If you love your sebenza with micarta, why not get the same thing with a different blade. It is a great slicer!!

wow, the Shirogorov 95 looks amazing. I normally don't like flippers, but that blade looks like it wants to slice for days... s90v please
 
My Shirogorov 95 is ultra super slicey. Honestly I can't recommend the knife enough. My advice is get one. Given your background and what you are looking for, you will not be disappointed. Mine is S30V and it is outstanding.
 
Shirogorov 111... "Folding death" I like to call it. Flies out really fast, does very well at slicing, and a fairly interesting knife.
 
I'm sure I missed the memo on the day when $400 to $800 became "mid-price". Good lord! :)

Another vote for a full custom. You can't go wrong that way.
 
I would say definitely a burger custom, a gereth bull warlock, or a spyderco stretch.
