I think the number one tool for helping you develop good sharpening technique is knives that you don't mind messing up.
There are many schools of thought based on anecdotal and empirical evidence.
understanding how fast your stone will cut, what kind fo steel your blade is made from etc. comes more into play after you learn how to sharpen freehand, on a wheel, or with a machine like an edge pro.
most importantly, don't take it to seriously, mistakes happen, reprofiling happens etc.
don't expect to learn it very quickly, it may take a considerable amount of time to figure it out.
