Help? Fixed blade, about 3", under 3oz, under $75 - do you know some?

Already mentioned is the Enzo Necker with handles

Even lighter is the necker skeleton knife with no handles
In flat or a zero grind scandi
You need to order its kydex sheath

The skeleton has a larger handle and a good working blade and weighs nothing and takes no space for a discreet carry

I watched some of this video. I dunno. I think people are likely to be confused by what you are saying and your varying criteria against which you are judging each knife. If I understand your video correctly, cutting cheese and salami are your intended uses, but you have assembled a whole bunch of knives that you dont consider well suited for that simple job (i skipped some) and don't own any of the most suitable lightweight, cheap, fixed blade hiking knives for the task you are describing - such as a basic Hultafors or the Morakniv that you recommend (but dont seem to own?)

Sorry to be critical, but i think your video would have been far more useful to your audience if you focussed only on knives that were objectively well suited to your task, and judged them against thoughtfully defined and consistent criteria.
 
The Victorinox paring knife was probably the best recommendation for salami slicing, so I don't see or understand the purpose of the video; what exactly does the OP want, and what exactly is he trying to convey with the vid?
 
The point of the video is to show as many options as possible for backpacking knives and discuss why you may want this knife or that knife. That's it.
