I picked this up at a flea market earlier today, and I'm wondering if anybody can help me identify what these are called. It's sharp on the convex side and has a hook at the end for what I'm assuming attaches to a ring for a pivot point. Similar to a stock knife (or bench knife).

Welcome to blade forums! You might ask about this one in the Bernard Levine knife I.D. forum here.

To me, it might be a turnip knife. The hook is usually less rounded than the hook on your blade, but sometime during its useful life someone may have re-purposed the blade for something else, and had the hook bent over to get it out of the way. Without provenance, there's no way to know.

I have several old blades like this on my old antique tool board. Took me a while to figure out what that vicious-looking hook was for.
