Help is this kitchen knife steel good

Is there a kind of steel that stands up well to your parents slicing everything on China plates and levering pumpkins in half etc

No, there is no steel that can withstand such abuse. If education is not a realistic option, set them up with cheap serrated knives and hide your good sharps when they come to visit.

Edited to add that the cutting on china plates is unfixable. Big thick knives can withstand torquing pumpkins apart.

Yeah. Still living at home. Any really great knives I buy would end up in storage til I get my own place. Thank you all very much for the comments and info.

In that case, the knives you're looking at might be a solid bet. No steel will win vs. ceramic plates, but those will at least be very easy to sharpen when they get torn up.

Any tips on sharpening techniques would also be appreciated if anyone has the time and energy to share. Thanks all very much.

For day to day use in the kitchen, take a serious look at Victorinox. With occasional use of a steel or ceramic rod, they stay plenty sharp and are a "best buy" for the money. Not super steel but well designed, used in many/most butcher shops, and "dishwasher safe". Not Shun, but at a fraction of the cost, hard to beat.
