Well it looks like the S110V is getting the most love. I really like the camo scales though and I only see that with S30V though. Seriously thinking about getting both and swapping the scales on them. Would that be crazy?
Hi quartertime, the "best" steel selection kind of depends on your sharpening routine. If you use your knife for weeks or months until it is quite dull before resharpening then you will likely appreciate the characteristics of s110v. The more dull you let your knife become before resharpening, the more a steel like s110v will start to stand out. If, on the other hand, you like to do regular touchups and keep your knife in the upper range of attainable sharpness then s30v/s35vn are better steels to work with. They are slightly easier to grind and are easier to take to very high levels of sharpness at any given grit size. I fall into the latter category so I prefer more balanced steels like s30v for edc but based on the love for s110v I think a lot of folks fall into the first category.
