Help me pick out a knife for my boss.

My boss is a bit old school, and doesn’t stay up to date on knife manufacturers, so I know that no matter how well made it is he wouldn’t look at a knife made in China the way some of us would. A Kizer or Civivi would be left on his dresser or end up in a tool box. I put myself in your spot and that’s the first thing that crossed my mind.
 
If he mentioned American whiskey get him an American knife.

You can get a Buck 501 from their custom shop with S30v blade, and oak scales for under $90, Other scales are available but the price goes up.

I'd agree with that. Pick a Buck, I think you'd know better than me which one to pick.
 
A Buck small Vantage select with wood covers sounds like it would be perfect for that purpose.

Very generous of you. If I had to buy my boss a knife, I'd buy her a Wallyworld POS and drive over it with my truck a few times before I gave it to her.

When you have a baby, it is leave for the dad to *bond* with his child (aka maternity leave for dad). I think our company offers 10 weeks of leave for new dads. I think it even applies to adoption in our company.
 
I have a few civivi's and a few Artisans. The ones that come to mind are the Tomahawk mentioned above, and the Civivi Brigand. Both are reverse tanto / cleaver style blades. The damascus versions should be right at the top of your price range.

DLT has those really nice 501s with micarta scales and S35VN blades…
 
I was going to say Buck 501, but Old Biker beat me to it. Case Copperlock would also be fitting choice.

actually i just noticed that the spyderco endura is under $100, i would go with that especially if he is a bigger guy and the endura comes in many different variations like the plain edge wharncliffe or all black finish, or he might like a nice stainless steel one

also i would not recommend the regular buck 501, i picked one up recently and right away i noticed that the scales on both sides would budge when handling the knife which annoyed me, i think this is because the scales are only held by two pins instead of 4 like the buck 110, otherwise it would be great knife

This would be my top choice, When OP mentioned that this guy likes American whiskey, I figure he might like a USA-made knife. The 20CV link is a great value and a fairly unique knife in my opinion.
That’s what I was thinking, plus it’s got “a little flash, but not too much”, meets all the parameters, and is one hell of a great knife for a good price.

i just wanted to add, there are also many differnt variations of the delica, if you gave one to someone else you can get a different one for your boss like the stainless steel version
 
I don’t know how well your boss is able to sharpen a knife or knows about the different steels that are harder and requires diamond or other particular methods. But you might want to get something that is easy to sharpen with conventional stones. Many of the knives I’ve gifted were 420hc or similar, only those who I knew were skilled and were able to sharpen the premium grade steels did I choose s30v or 20cv and similar.
