Help with AEB-L Santoku

This is my first time working with AEB-L and making a Santoku style blade. The blade will be about .098 thick and 6 3/4in long. I will be filing my bevels. Is going this route going to work ok? Should I file so much on one side then go to the other. Or finish one side then move to the other? I am a bit concerned about warping. I will be sending this knife to Peters for the heat treat. Can someone give me some advice.

Mike, I like to alternate sides when filing my bevels. I know exactly what you mean about keeping it straight when filing. Interestingly, some steels will stay dead straight even after completely filing one side entirely, other steels will start to bow if I did that. I have not found the rhyme or reason as to why some steels will remain dead straight, and others will bend. Also, you can take your AEB-L edge down to final dimensions, as well as the finish. Take it to your final finish. Brad at Peter's will take care of any warps that may occur during HT.
 
Brad at Peters told me to leave .010 edge on the PM's I was sending him. M390, S30v, S35VN.

The best choice depends on the method you will be working. In general I suppose you plan to end with with some sort of convex (or combination of flat and convex) grind. I have ground a 240 gyuto in D2 steel with a file (filing jog to be more exact) - have a look HERE - maybe it can be of help.
