Help with good knife for small to medium work....?

It's a custom shopped version of the sar5. It was a really cool blade and handle profile, but I didn't take into account weight balance and scale position. There was still too much metal behind the index finger because of how long the handle is (the balance point was on the middle finger or farther back), and you only got half a scale for your index finger when you choked up. Just changing the profile wasn't enough to get the sar5 where I wanted it, I needed to change several other factors to get the balance point to be at the index finger.

The sar5 is a unique piece from busse though, as it was an unfinished/proto-proto-type that wasn't supposed to go out. If jerry had gotten the final design into production instead of the proto-proto design, I think it would have been much better balanced. Less material in the handle and a taller blade (two features in the final rendition design) would have gotten the balance point where it needed to be.

I always wanted a pork belly skinner to modify, but never had the money for it. I imagine it is really awesome for kitchen work.

As for choiless...

Most Busse knives have choils. However, if you don't mind a model with a 6" usable blade (choiless) or slightly less usable length blade (same model with a finger choil), I highly recommend the current offering still available for ordering directly through Busse, the BOSS Jack or the slightly thinner version, the BOSS Jack Limited Edition, which is nice and light.

It's true, except for the postage-stamp size pics of the muddy and sage versions, in the array under the combat grade listing. Certainly not enough size to get much perspective, though--just enough to make you wish you could see more.
