Help with grinder wheel design

I found a guy in town with a nice sized lathe, and he has agreed to help me make some grinder wheels for my EERF build. However, I don't know how to tell him to mill the bearing pockets so I can press the bearings in, but be able to tighten them down on the axle without inducing a huge amount of side load. Can someone please explain this to me, maybe with pictures?

Also, how wide should the platen idle wheels and the tracking wheels be? I know it's been discussed before, but my google-fu is weak today. Again, pictures are awesome. I'm kind of linguistically challenged.
 
If he is a good machinist, all you will need do is give him the wheel measurements desired and the actual bearings, and he will do the rest.
 
I'm curious what sort of bearings should be used for something like this and where a good place to buy them is?

He is not a great machinist. He's learning, and he really hasn't done a whole lot of this kind of stuff. Perhaps hobbyist machinist would be more accurate.

I'm using R8-2RS sealed bearings from Fastenal. VXB has them as well. They are 1/2" IDx 1 1/8" ODx 5/16" thick. They are nice bearings, and I either got the recommendation from here or knifedogs forum, I can remember.
