Well I am unsure of the first two questions, but I can tell you about the quality on the 4 I have owned. I was actually pleasantly surprised on all three with how good the F&F was, no play, good factory edges, and purty bone!
Generally, the same patterns. Most of the Henckels knives (black shields) had stainless steel blades. The Boker Tang Stamp knives had carbon steel blades. There were a few Henckels with carbon blades. These knives can be identified by a red shield.
I have picked up 7 of the 4 blade stockmans this year and the quality on all but 1 has been outstanding. I even picked a couple up from Mike (Knifeswapers) store, a Yellow bone and a Stag one. Very knice bone on these Henckels.
