Here's a test for ya knives !!!

Cliff, you have not gone over the edge until you can so kindly give us a taste test of those maple chips. Just curious, as Im from Florida and dont see much in that variatle.

Too late..the cat ate them ;).
I haven't seen him for a couple of days. Hope everything came out alright.

I did try the cutting & slicing with a convex edged Fox River & while it worked , it certainly was a lot harder than with the thinner Scandi grind blade.
MUCH more effort was required with the convex blade.
Same piece of maple was used.
