The mineral oil will definitely make the micarta darker and it will last much longer than just wetting the grips. Black micarta looks green/OD in color when new.

Ok, so what is the best thing to get oils etc. out of micarta?

wash with soapy water. be sure to dry it good. oil steel.

This is exactly why some people will list a Busse for sale and say it has green micarta slabs when it actually has black.

Someone told me if I wanted Mineral Oil out after I put it on, I could use a mild soap to wash the Micarta and once it dried it would look just like it originally did.
