High carbon steel for kitchen knives

you can get a basic thermocouple and display for $35-$40 and a piece of pipe or square tube for a baffle and you can do reasonable heat treat. get a good temperature display and work on controlling the heat. if you can keep the heat +/-25F for 10 minutes, you can heat treat most high carbon steels. the 80CrV2 sold by AKS doesn't need any special treatment other than keeping the temperature below 1500F. my 1084 cleaver at Rc62 cleaned and steaked 7 big fish yesterday with no chips.
