High Performance Carbon Steel

So what puts these in the category of "high performance" and puts other steels out of that category?
Nothing. Those steels are just simply some of the steels I've used and would think of as high performance and some that I haven't used but have heard others praise as high performance. I do understand though it all comes down to the heat treat, grind and so on that makes a steel a better performer and not just the steel itself.

What properties do the ones you have used makes you consider them high performance?

And grind doesnt make a steel a better performer. Two identically ground knives of different steels dont perform the same.

All I know is I've only used 5160, 52100 and O1 of the steels I've listed and they've worked pretty good for me. I guess high performance depends on what the person that is using the knife feels, the knife and steel it uses may be high performance to me, but not so much to others.

I stand corrected on the grind and you're right. Still learning.
