Himalayan Imports R-10 and Sausage/shrimp gumbo

The mission - my wife and I will drink a bottle of Chilean red wine and review a sausage/shrimp gumbo recipe and a HI R-10 that I got a while back on a recommendation from Corporal Punishment.

The recipe - Betty Crocker's Shrimp Gumbo (our addition was the Andouille sausage...)

1/4 cup margarine or butter
2 medium onions sliced
1 medium green bell pepper cut into thin strips
2 cloves garlic, crushed
2 tablespoons all purpose flour
3 cups beef broth
1 teaspoon red pepper sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
1 package (or 1 can okra) frozen cut okra thawed
1 can (16 ounces) whole tomatoes
1 can (6 oz) tomato paste
1 1/2 pounds medium uncooked shrimp

(Serve over rice)

The knife: HI's carbon steel goodness with wood scales and leather sheath.

Man's perspective: The knife is relatively thick at the spine but has a fine edge. The grip is excellent and feels very natural in the hand. First impressions - very good. I am impressed. The sheath leaves a lot to be desired in my estimation but that is ok. The gumbo and the wife both rock :thumbup:.

Woman's perspective: Likes the knife but it is too thick and too heavy for regular kitchen cutting. Gumbo is a keeper. (So is the husband....)
 
You're destroying me. I had sausage and onion over rice last night. I knew I left something out !!! :D
 
Tasty looking gumbo. I love my R-10. Good to see it getting some love somewhere besides the HI Forum.

CCR - My initial impression is that it is a great user blade. Like the feel of the grips:thumbup:

We served this stuff with fresh baked bread (I normally would have made cornbread), it was excellent. Good recipe...

Yummy. My R10 is one of my favs. Super sharp working blade.

It appears to be rugged and sharp..
 
I love my R-10. I did however make myself a new sheath. It is a great woods knife for general tasks. I reworked the edge so that it is closer to a scandi and it is now screamin sharp.

The sheath is really no good, but I think you are definitely paying for the blade in this situation... Do you have a pic of what you made? My R-10 is pretty sharp as is, yours must be over the top...
 
I just got my new R-10 today and i like it but i think ill get a new sheath for it. might get get a new handle on it to few cracks in the wood but i really like how it feels in the hand

Yep, the contour of the handle is really nice. The finish of the blade is decent too, although mine has significant patina from the onions already....

On to the knives:
Your R-10 looks more like my second one. My first one is the user, and I wonder if they've changed them (I like the version I got first better)

I too admit that the R-series sheaths suck (as did my kerambit sheath which just flat fell apart). I had a custom one made at the same time as my quickdraw rig:

The shape of the handle/blade interface makes them hard to retain in a sheath, I think a pouch sheath would work better.

Like Wildmike, I also scandi ground mine, and by God is that thing sharp. Like I accidentally just nudged the blade while it was laying on a table and it cut me near to the bone and I didn't feel a thing.

One thing I've taken away from HI, is that I love 5160. I love the toughness, and I can't get an edge like that on any other steel, although I can come close with 1095 and INFI.

Let's hear it for the R-10!!

Cpl. - The wife says thanks! I like handle shape of your first R10 too, they must have changed it (or maybe they very from Kami to Kami). I like mine a lot in terms of the grip though, it feels good in the hand. Nice sheath rig, it looks a lot like one that Ilbruche made me for my Machax...

I've hear that Ilbruche is making leather again, we're getting a mighty strong stable of leather benders around here... Try this recipe, it is very good. I add a little Texas Pete hot sauce once it has been served over the rice, and it is about as good a gumbo as I have had (just had it again for lunch:thumbup:)

Oh, man....I Looove shrimp gumbo with andouille ! That is making me hungry and i already had lunch. BTW.... If you like the R-!0 you should check out the YCS karda...and the Sarge knife...and.....
 
mneedham. I wish I could post pics, but no camera. I mad a piouch type sheath that allows horizontal carry. My only problem is the leather I use is more suited to moccasins than sheaths. But it does work.

I too am nuts about 5160. I have several customs which use it as well (forged of course). This steel takes an exceptional edge easily, holds it well and resharpens easily in the field. Plus it takes the abuse of real outdoors work without fail which is what I want.

Mine has Buffalo horn handles other than that it looks like Corp's. And yeah it pushes hair.
