Depends, steels with higher alloy content or too much chromium don't respond well to natural stones, basic carbon like 10xx steel are real nice though. Natural stones can also be steel specific so finding ones that work with the steels you use can be challenging at times.
Your right about the time too, it took me a few months to get the proper feel and understanding of how to use the stones before I could effectively bring out grains or hamon. Very worth the effort though and with your background I'd bet you would very much enjoy the work.
