I picked up this Hobart meat slicer blade for $7. Any guesses what type of stainless it is? It's 3/16 I figured I could cut a few knives out of it.

An email or phone call to Hobart could be a lot more accurate than a guess. Give them the numbers off the blade.
 
nice find! Sometimes manufacturers won't talk and an analysis will cost 25$ but if you are working it in the hardened state you don't always need to knokw what alloy you have.
