Hi,
I'm new to this forum and to knives in general, so please forgive my newbie questions. I've been mainly studying japanese swords, but now have come across japanese kitchen knives (hocho).
So I would like to ask some questions concerning high-end kitchen knives. What is usually considered to be the best kitchen knife/knives? by professional chefs and blade enthusiasts i mean... I'm not sure where hocho "stands" in the hierarchy, that's why the question as i understand, hocho requires quite a lot of maintenance, and they are a bit fragile too. on the other hand, i've heard a lot of chefs say good words about hocho. what are the main competitors of hocho-knives? i mean, from other countries, europe or the states? what are their good sides/bad sides?
and last but not least - what are your experience with hocho knives from Takefu knife village? has enyone used these blades, what are your comments (on quality, etc.)?
sorry, it a bit too many questions to answer all at once... Still i hope you can help me out!
If you can point me to some website that would answer most of these questions, it would also be vey helpful.
