That grind height calculator may be making the assumption you want the tangent of the diameter to sit right at the edge. That is not necessarily what you want. So you have a lot more liberty than the calculator implies.
I think you'll be able to do a 1/2" grind height on 3/16 with a larger wheel size, but you may be closer to a V grind.
I agree with Nathan on this one - the calculator tells you the "max" height of the grind if you don't fake it higher. I've never had a problem doing a "short" grind on a larger wheel.
