Horace Kephart style of cooking

Hi all,

Horace Kephart writes in his book on Camping and Woodcraft on page 147.
Under the title of Going Alone, that when you go alone on your camping trips you get to do all things your way. No one to share meals with or clean up after, get up when you want, do not have to listen to anyones problems or snoring stuff like that.
On the same lines of that stuff you get to cook the what you want and eat what you want and cook it the way you want. On page 148 Horace talks about cooking cubes of meat on a sharpened stick. Most of you might say that we do that too it is called roasting hots dogs lol. Well I like to roast hot dogs to.

Once your meat starts to warm up and the fat starts to run the length of it.

Once you notice that happeing you know that it will not be long before you do this

Like take bite out of the sucker lol.

Now like Horace I like to roast meat too, BUT there is one type of meat that I really really like to roast over the coals of a hard wood fire made from walnut and the smoke and the flavor are like no other to me.
What is that meat that I am talking about.

Heck some times I can not wait for just one slice I have to put on 2:eek: slices and cook them at the same time lol

Horace kephart, E. Kreps, Nessmuk, and many other of the old time camping guys took bacon with them to cook over there fires.

How many of you all take bacon on your camping trips or even just to have a fire and cook some meat on when in the woods?

I've been known to take a bacon wrapped filet mignon or sirloin with me, and cook that on a stick, but rarely just plain bacon. I might have to start doing that, though :thumbup:
 
nothing beats, thick-cut bacon, spicey spam, frozen breakfast sausage, frozen bratwurst and italian sausage, or some ribs meat from a fresh kill, when out camping.... i like freezing the meat so it lasts for a couple days at least, ...and you can have fresh rotisseried chicken or steak, etc., almost a week out.... canned chicken and some fresh veggies with rice noodles or ramen can really stick to your ribs at the end of a week on the trail, without tasting like a military ration....

here i am torturing my Mexi-cur pup last week. she's taught to sit when she begs, like a lady. - the white coyote knew i wasn't givin' up no bacon, so she went on to sucker some softer hearts (left).

proper bacon-eating form demands that the pinky is stuck straight out, at least when being merciless to your dogs, or old-maiding the last piece of heart attack strip.

i cook most of my stuff in a covered pan - too much camp food gets charred and dried out - when you let the steam cook it under a lid after a quick browning without it, everything stays moist and the wood avaiable doesn't flavor the food so much, so you aren't dependent on finding mesquite, etc.

Bryan, your post made my day !! That's exactly how I like to eat. I take a 5 lb. slab with me when I go in the bush, just like Horace did . I like cayenne pepper on mine.

Yup, Bacon. Nature's perfect food. Mebbe for lunch tomorrow, I'll have this, now that you got me thinkin' the bacon:

Very nice! That thick cut bacon looks great...droool..oh, uh sorry.

I love roasting meat over a fire, pan cooking usually takes more clean-up time.
 
Its also great to take along precooked on those hikes where you're going to eat lots of freezedried food. Makes powdered eggs, chicken alfredo or mashed taters a lot better.

thank god sir i thought you were gonna show more pictures of my favorite kephart blade and continue to refuse to sell it to me. and you know exactly which one i am talking about so don't pretend you don't :)

looks like a good trip and ummmm thick cut bacon, its a amazing food isn't it

now sell me that knife damn it :) or at least make me one as i need it
 
I'm a big fan of meat on a stick cooking when out. I clean off whatever suitable sticks I can find then either wrap or skewer bacon on them. Once i'm done cooking I just burn the sticks, no need for pot/grill cleaning. Same goes for cooking sausages.

Can't beat the flavor imo.
 
I didn't take bacon, but i had summer sausage and that stuff was good when I cooked it a little bit over the open flame!!!!

Mustard man, Yea I bet that combo taste good. I might have to try that too. this morning I just did my normall, Eggs Bacon and Fry bread.

I might head back out for a evening fire though to cook up some brats that I got. Not sure just yet.

Well as to selling this knife it is not going to happen. But if you every want me to build you one let me know. I have some cocobolo wood that needs to be put to use and then go to a good home on a kephart pattern knife. contact me for real and I will give you my hobby knife price. instead of the regular price.

Great pics Bryan, nothing beats the smell of bacon frying over an open fire...now I seldom get that sensation as I'm now the one doing the frying...gee, there are parts of my childhood I really miss :grumpy:
