Horace Kephart style of cooking

never cook bacon directly on the grill, use a pan or griddle.

Honest I thought it would be quick and it was and (sigh) burn baby burn....

Hi mistwalker, Thanks. Yea there is just something awesome about the smell of bacon cooking over a open fire. It is ok to have others doing the cooking too, but I really like to cook. I do it every time I get the chance too lol.
Take care man,
Bryan

Bacon is great on a camping trip; put a slice inside a trout before cooking or wrap a slice around almost any kind of meat before grilling - my favorite way to cook a wild turkey. Thanks for the freat pics as always!

Meat is good but do not forget the fish as a main course
I use the green leaves and twigs off the cooking stick to give the fish a quick smoke

A nice green birch stick little length of pine root quick fire and good to go

Very wholesome and good eating

fishiker, thanks for the tip. I never thought about putting some in fish and then cooking that way.

Thanks for posting Dan, That looks like a good way to cook also.

Shotgun, Beef bacon is just that bacon that is all made from beef. The rib meat from what I have been told.

FedHO, lol Now that is a idea lol.

I must be living under a rock then because I thought bacon=piggy. Now I need to peruse the meat section.

Hi Jim, lol yea that might be a good thing to do lol. Just make sure you do not stop reading my post lol.

kgd, I like your style lol.

Shotgun, I do not see it very offen in most stores, but there is a little processing plant
and store in Diller Ne. about 5 miles aways from where I live and they sell it and and the best jerky I have ever had. Anyways just maybe you will find some in your area.

I don't have a picture of any, but bacon wrapped hotdogs are one of my favorite treats cooked over an open fire. If you try it on a grill, all you get is a really charred hotdog that tastes like bacon!

Or just get a pig belly from your butcher and if you dont have the desire to smoke it, you can always just use a cure and put it in the fridge 24 hours, take all the cure off and leave it open in the fridge for a couple more weeks and voila pancetta. Nothing like having a couple of pork bellies worth of pancetta stressa cured in the fridge.

Must. Have. Bacon.

Funny you should ask - when my wife and I lived in Egypt and took a long trip into the Western Desert, my wife packed eggs and bacon to have every morning even though our guide was cooking meals! Here she is frying up on day 5 of our trip, a hundreds of miles from anywhere:
