If you aren't bothered about appearance, you can make any handle more or less unbreakable by serving (wrapping) it tightly in Dacron thread, the stuff they use for making bowstrings.
Coat the handle with a very thin layer of PVA glue or something similar and then wrap it with the thread, like an Egyptian mummy. The glue holds it in place and stops it unravelling.
The dacron thread is very strong, and will hold the handle in against the leverage applied by the tang. A wrapped handle may not look as cute as horn or wood but it's not unsightly, and it does provide a nice firm non-slip grip into the bargain.
If you wear a ring on the hand you hold the handle in, after a while the thread may start to fray. This can be avoided by applying 2 or 3 coats of PU varnish or (better still) lacquer
You can use the more traditional brass wire instead of Dacron. It looks nicer, but I find that the wire does a pretty good job of turning my hands to flash-fry steak after a day's use.
