I have several Infi knives in Virginia Beach heat and Dismal Swamp moisture, and I haven't had any trouble with them rusting. You can't compare composition with regular steels because it has nitrogen.
INFI stays just as oxidation free as any of my folders with the exception of H1. I wouldn't hesitate at all to use it in Florida. The only thing I'd think about avoiding would be doublecut finish, and I think it would be fine if you took care of it. Satin and coated barely need any care. Just a little oil or Eezox every once in a while is plenty.
