I did 10years worth of camping/kayaking/mountain biking trips in West Oz with nothing more than a large locking SAK. This, strictly, is still all I need for my adventures. 
For me a larger knife is just more convenient. I don't need my RAT7 but it makes, literally, short work of most tasks.
Also the longer the trip goes on ie; the more I am 'living' in the bush rather than just camping, the more a big knife gets used.
