stroping? steeling? do those 2 things do the same thing? are there other ways to take a burr off of my blade?

1st try edge-leading stroke into the stone with very little pressure. sometime needed to, for acute edge or tough alloy, raise the angle by 5-10 degrees edge-leading with pressure less than 1/2 weight of the blade. Dmt diafold ex-ex-f is excellent for deburring most steel - yup, including those heavily packed with vanadium carbides at high rc. Strop works well for fine-grain steels. Steeling mainly for straighten out rolled edge, maybe diamond rod would hacks away burr & rolled-edge.
