How do ya'll test your knives?

Just like it says in the title, how do ya'll test your knives after you make them? I'm talking in terms of cutting ability, edge retention , overall strength. I just want to see what other people do. I usually cut and chop on a pressure treated piece of wood, do some whittling, then see if it will still slice copy paper or shave hair. What do you do?
