I use the machine for everything. Take a look at Trace Rinaldi's satin finish. Nothing wrong with stoping at that grit with stainless material I dont think. Its a very coarse satin finish but I like it
Actually I go to 220 with a norton ceramic belt, and then schotchbright. It gives a very functional, uniform finish, and can be easily refinished. This encourages the user to USE the knife because I tell them it can be made to look like new with very little trouble.
When its done right I think it looks pretty good too.
