How do you sharpen newly made knives

Lon Humphrey's video is pretty good.

But, not knowing the exact angle you are sharpening to is not for everyone.

If you tilt the platen to a specific angle or us a bubble jig you will know the angle, which comes in handy.
 
This has been one of the most useful bits of information I've found on this forum. It's from Nathan the machinist and works perfect for putting the final edge on your blades. To use it, you will need a variable speed grinder set up to run wet. I have a couple of hooks in the ceiling that I hang my rod and chains from and take it down when finished. I start with a 120 belt, go to 220, 320 and then 400. From there I go to a 600 then 1200 diamond stone keeping my angle using one of Fred's bubble jigs. If I really want a keen edge I'll keep going with a 2000 then 5000 wet stone. This method creates a perfectly shaped wickedly sharp edge.

For a "flat" edge, I sharpen on a belt machine, I use a Bubble Jig to control the desired angle and finish with an ERU sharpener set at a matching angle. Full proof for "flat" edges.

How do you put an edge on a blade that has scales on it that can not come off?

Obviously this method only works for sharpening prior to having the scales in place. If I need to sharpen a blade that has scales already attached, I use Fred's Bubble Jig to maintain the angle.
