I don't really use the larger models that much,to me there a tool first then a knife,while to me the 2,3,and 4 layer models feel better in the hand for cutting and you still have some additional tools if you need them.
If your hand will wrap around a Swisschamp, the knife is useable. For years that was my only pocketknife and I don't remember its ergonomics as any kind of problem. Sustained cutting for long periods is another story, but if you find yourself in that situation often, maybe you need a substantial knife rather than any SAK.
Multitool implements are seldom best for the job, trading off for being handy when needed.
I EDCd a SwissChamp for almost a year and I liked having it handy in my back pocket, riding vertically alongside my wallet. I'm a pretty small guy, though, and I eventually decided that that was just too much bulk in the back of my pants.
I'm EDC'ing a custom made Vic 84mm SAK with 4 layers now and it's just right for my needs. The 84mm length makes a surprisingly better front pocket carry for me, compared to the 91mm Vics. The 4 layers is just about the maximum that I'd want to carry in a front pocket.
I also EDC a 58mm Vic Rogue on my key chain in order to have a small "surgically sharp" emergency blade handy and in case I think I should leave my 84mm SAK in the car when entering knife-averse surroundings.
For me a 3 layer model SAK is ideal. I have one and it's always in my pocket to supplement the Leatherman Wave on my hip. How can you carry this SAK model http://lifeandhealth.guardian.co.uk/consumer/story/0,,1965050,00.html weighing 2 lbs? This one is more of a collector's item than to be actually used.
