It's 160 layers of 1080 and 15N20. Both steels are very tough so I doubt you're going to break it, especially since Rowen runs ESEE pretty soft. You might bend it if you use a cheater bar, otherwise I'd worry about your hand more. The Izula is so short, if you're prying bard enough to bend the steel at the fulcrum, that means tremendous forces on the handle. I have pried a 5 inch deadwood tree limbs good two inches apart with the Izula and barely felt or flexing.
Edge retention... Well I think Damascus will get toothy as it dulls but I'm not sure how different the two steels are, it's not like one is drastically more wear resistant so the edge probably won't dull into microserrations like you here some suggestions Damascus is good for.
The Damascus in the Damascus Izula is just meant to be pretty. They use the 15N20 because it resists the acid better and stays shiny. Otherwise I would expect it to be as rough as their 1095, or at least close enough you won't notice. Plus as brancron mentioned, they will still warrant it against ANY breakage no matter the cause. They don't do that for the 440C Izula so. Plus with as costly as he Damascus is, you'd figure they wouldn't offer their no-question warranty if they thought it'd be easier to break.
So yeah blah blah ESEE Damascus is just prettier than their 1095, probably no better or worse performance wise
