This is an easy fix. Sand the handle down to remove the varnish. Stain the handle to your preferred color (may take a couple coats; allow 24 hours for each coat to dry). Seal the handle with some polyurethane. Slather some petroleum jelly into the pivot area, and heat it up with a hair drier so that it soaks in. Repeat a couple times until it doesn't soak in so well, and repeat as necessary as standard maintenance. Your Opinel should be pretty well moisture resistant at this point.

I've also seen those nasty serations and the price, polypropylene is cheap, it should fall right in with their carbon or trekker knives.
Take that classic looking Sandvik blade and wedge it in some solid color poly without the "grips" and call it a day, it should look just like the Opinel color knives but not wood handled.
