Are all the countries mentioned making Traditional knives though? I see Taiwan and associate that with the Moderns.

Will, @SomeGuyInTaipei has made some fascinating posts on two Taiwanese traditional knife patterns: the Shilin Cutter, and the indigenous Truku blade.
