How much do you have to know about your steels?

I was able to free hand sharpen a buck 110 to hair whittling sharp! I believe it is 440 stainless with a letter of some sort. It took little time to get there probably because the steel was not too hard. On the other hand, my D2 paramilitary takes a 3 day weekend to get to the same point. I then just take it to the paper wheels. I am with Frank, I kinda want to try them all. I dig that 1095 carbon!!!!
