How often do you do it?

When it needs it , generally every few days. I am willing to bet that a lot of folks on here oversharpen thier knives (wasting steel) , fine and dandy on a low cost EDC but sort silly on a high end knife. IMO

There was a good article in Blade about this an issue or so ago.


Also , can you believe I had a co-worker who once told me my knife was too sharp and therefore more dangerous ? :D
 
Haha, yeah none of the people I work with believe that a dull knife is more dangerous than a sharp one. I'm pretty fanatical about keeping my knives wicked sharp. Once you've used a knife that is hair splitting sharp on every day tasks its impossible to go back to a mediocre edge. I can usually maintain the edges on my edc's with just a spyderco fine and ultra fine ceramic. I've since stopped using steels to realign the edge since Cliff made the point that removing the weakened metal the knife's edge is much more effective than realigning it so it can break off later.

Am I the only one out here who disagrees with this statement?? Nearly every cut I have been inflicted with has been with a sharp knife, nearly every time I sharpen a knife the owner cuts himself with it within 1-2 minutes, and most cuts I see are with new(er) exacto blades. Granted dull blades are harder to use, but as most people are used to what we here would call dull blades they do not know how to use a knife properly and try to force through material instead of slicing and end up using too much force - thereby injuring themselves.
Anybody else notice this or am I alone here?

(p.s.- I try to keep my knives hair shaving sharp with food prep knives -including EDC- but will allow my non-food knife to get duller before sharpening, but it must still cleanly cut paper.)
