How shall I hollow grind my 7 mm thick blade?

Hello. Please your help: My contact wheel is 400 mm in diameter (15.75") and the blade is 7 mm thick (0.27").
Never ever had such a thick meaty steel. Do you think I should free hand this one? Never did free hand, though.
Shall I use some kind of guide or jig? How many degree shall I take here on the grind to accept, let’s say – about ¾ grinding height on the blade?

I took care of the shell/shall translation for you.

Your wheel will hollow grind that thickness to a grind height of about 32-34mm ( a bit over 1.25"). After making the starter channels, work the grind down toward the edge. If you need a higher grind line than 30mm, start the grind higher, and manually work out the lower part toward the edge. Once you get started, it sort of makes sense how to proceed.

That seems more like an axe than a knife
That's a very steep angle.
