How sharp do you like your bigger ESEEs to be?

I keep every knife I own shaving sharp....otherwise it's as useful as an unloaded firearm IMHO.
 
Well I'm done working on my 6 for the night. It's cutting arm hairs with relative ease.

I'm sharpening freehand with a 325/1200 DMT Diamond stone and a 1000/4000 Japanese waterstone from Lee-Valley. Then stropping on my leather belt.

Even if it's harder, I prefer to learn how to sharpen my own knives instead of sending them off to have it done by someone else. I feel like it'll pay off in the long run.
 
I keep mine as sharp as I can get them using my basic Sharpmaker. My knives are usually sharp enough to easily shave with.

+1. I like sharp knives. Doesn't have to be some crazy thin angle to be sharp. I'll do my knives on the 40 side and they cut nicely.
 
I keep mine as sharp as possible, however I may keep the edge angle wider on my larger blades than I would on my small EDC carry knife. I may go 22-25 degrees per side rather than 15-18 degrees just so that the edge isn't as fragile when I am doing any type of chopping.

I usually will slice some paper, and once the cut is consistent, and smooth with no hang ups my large ESEE/fixed blade is ready for the field.
