How sharp should your kitchen knives be?

And I did sharpen the knives and made sure I told my wife to be careful.
What is the first thing she does? Cut herself. :(
 
There are a TON of videos on youtube about learning proper knife skills and how to correctly prepare just about anything. Even working on practicing preparing food with the pinch grip and "claw" like timbit mentioned would be incredibly beneficial especially if one has never had any training before.
