How Sharp?

My TG (original) came quite sharp. Easily shaved hair, but seemed to crush paper when trying to slice it. But after about 20 strokes on a leather belt it easily managed to slice perfect spirals from the top of the paper... nice!
 
Since they've started putting their names on the knives that they sharpen I've had no complaints.

When you get mashes, rolls, and dents in your edge you can realign the majority of the metal using a burnishing rod like this one. Burnishing is different than steeling in that no metal is removed in the process, your just pushing it back into alignment. The same maleability that helps INFI deform rather than fracture also helps it 'deform' back into alignment under the guidance of the rod. Often times you won't even need to do any metal removal after burnishing, as the edge will have been brought back up to usable sharpness. At the very least, you'll save metal by not having to grind past deformations.
