How to maintain and keep away from scratches? Spyderco s30v Black

I'm not sure you're listening. If the coating is DLC, and you cut aluminum cans, those aren't scratches, it's aluminum smear, and can be removed.
If it's really scratches from say, cutting hardened shim stock or something like that...then disregard.

BTW, it ok to cut aluminum cans with your knife.
 
I agree with jpm2, it is definitely ok to cut aluminium cans with a PM2 and chances are the trails are residue of aluminium.
 
Unless you know what is in the next piece of cardboard you cut, you could scratch your blade.
