From a Cold Steel Recon 1 XHP? Would aircraft paint stripper work?
I would prefer the blade not to be coated.

The new XHP Cold Steel's are DLC coated. Gonna be pretty hard to remove, but not impossible. The older Teflon coating on their Aus8 variants would schlep right off with aircraft paint stripper.

Someone will chime in with more experience I'm sure..

I'm no authority on the subject but I remember hearing that DLC coatings can only be removed by abrasive methods like sanding or bead blasting.

Citristrip. Available everywhere.

It's safe enough to use indoors with adequate ventilation. We use it in the woodshop all the time. Just smear it on, let it sit, wipe it off.

Here's a thread demo'ing its use - http://www.bladeforums.com/forums/showthread.php/1291320-What-s-the-cheapest-way-to-strip-a-Kabar

You could also try sandpaper. It'll take several hours though. Start with 180 and progress higher. 400 will leave you with a nice stain finish.

This works on DLC coating?

Here's a video on stripping a knife finish. Guy's kind of annoying but the info is good:
