How to remove epoxy

Assuming you want to replace the handle entirely, I use an angle grinder with a 24 or 36 grit disc (I 'mod' more than 'make') . It removes lots of material and is still controllable. A little bit Rambo but it works !
 
use a hack saw and saw down the length of the scale, let the saw blade slide down the tang. I used this when I was trying to save old burl scales on a poorly tempered blade.
If you don't want the scales use what deadeyeLefty said, works faster.
 
Extreme cold will usually loosen epoxy's grip. If there are no notches, holes pins that can't be driven out try an night in the deep freeze or some dry ice. I like the hammer and anvil method with a grinder clean up myself!
 
Use heat, most epoxies give up when heat is applied.Put it in the oven to about 300-350 still cool enough not to damage blade but will loosen the epoxy.Dave:)
 
DC has it. Heat the whole knife up to about 300F and the handle will pull right off. If there are rivets, they can be pushed out once the epoxy softens.Obviously you must wear gloves and follow the necessary safety when handing 300-400F knives.

I have done this one time by submerging the handle end in boiling water for 20minutes. Came right off.
