OK I just ordered a Moran. Havent messed with one, but all the great reviews cant be wrong. One question though. How does one sharpen the convex edge?

If all you have is a conventional stone or straight sharpener, the best method would be to "drag" the edge, just like sharpening but backwards, by pulling the knife away from the edge. Roll it slightly as you go to keep the convex curve on the edge. Then strop it thoroughly; if you don't have a strop use the side of a tall boot or a good piece of heavy cardboard or whatever...something that has a bit of yield and a slightly abrasive texture.

If you have access to a belt grinder, just slack-belt it and then power-strop it. Stropping is the key to keeping a nice convex edge. Beautiful things, cut like the Dickens, though I've never heard a completely convincing argument as to why.

Corduroy, I would guess that it has to do with the low drag interface. A traditional v-grind has two sharp corners (where the edge grind meets the primary bevel) that are high pressure contact points between the blade and the material getting cut, a convex edge does not.

There have been other discussions of this topic, sharpening a Moran. I posted a link and quoted an interesting method at http://www.bladeforums.com/ubb/Forum20/HTML/000514.html which is the topic "Moran Sheath."
It is a looooong story why it is in that thread.
