I started skinning mine the same way but I remove the head and feet first. It works great as long as the body is not shot up too bad. I try to stick with head shots but I missed and hit the chest once. When I tried to skin him this way he ripped in half and I had a awful mess.

I don't bother gutting them anymore. I clean them as soon as they hit the ground. I fillet the ribs up to the front shoulders and then remove them. Next I fillet the lower back down to the hips and remove them. You will end up with with four legs with the rib meat and back meat still attached. Discard the rest with the entrails still intact. The local scavengers will put it to good use. If you do a good job you will have little or no wast. No playing in the blood and guts this way.
 
Great tutorial and great pics. Thanks for sharing this. It looks like this is a whole lot easier than the way I was taught. When I am done it normally looks like a massacre!!:D
