Good answers so far. I normally don't take my edges past "tree topping" sharp. I strop at the end of the day if I have used the knife. "Hair popping" is good enough for my edges. The

I had one knife at a shallow angle that was always tree topping hair whittling sharp. Then I found the edge a bit delicate the first time it touched bone, it rolled a bit. Of course, the bone that rolled the edge was my bone. Severed a nerve and did permanent damage to the dominant hand thumb.

I took the bevel a bit thicker on that knife. Can't be having an edge that rolls that easy!
