What do you consider a thin knife?
1/32" and 3/64" I consider thin and just start a bevel before heat treat. On stock 1/16" or 0.0625 or 1.5mm, I take the edge down to 0.5mm or so before HT. when using O1 or 1.2519, i quench to black then weighted aluminum plates.
