I generally use a sheath knife for hunting and fishing. For deer, it's a BRKT Wolf River as my skinner & processing knife, and an IMP for opening up in the field. Fishing knife is a Jarvenpaa fillet knife, which lives in the tackle box.
Welp, I have spent a little time straightening, sharpening, and cleaning this Buck 110 for my Father-in-law. Lets see, about 5 hours on the blade, some cleaner, some brushing, some wood polish, some brasso, some mineral oil. The sheath needed stitching and some saddle soap. It's been his hunting knife for many many years. Looks like he will get to clean a few more deer with it.
I just looked up the date. Apparently, this Tang Stamp denotes 1967-1972. This thing has been cleaning deer for 40+ years!!!
Well for 10 or 12 years I used a Buck 110 to process rabbit and squirrels, catfish and deer, from to freezer. I then switched to a Case 3254 Trapper with cv blades.
Based on my experiance I would choose a Trapper pattern slip-joint with carbon steel blades. I personally think size is really a mater of personal preference. I have mostly used 4 1/8th inch trappers but feel that a 3 1/2 inch mini could be just as effective in the right hands.
