Nice Buck! Great pics guys.. Andy, I wanted to know how do them Kangaroos taste? I hear nothing but good, must be like a nice big rabbit ;)
 
Dang kdstrick, I need your INFI, I do mule deer and elk, and I haven't had one infi blade that can go from start to finish without needing to be resharpened, all of my results have been about the same as virtuovoice on YouTube with his infi, the best test I ever did was the S5 101 vs the S5 infi-- same geometry , 5 of each from factory to different sharpening methods and infi lost in edge holding every time, I've said it before, I must have the unluckiest infi pile every owned, everyone else's seems to hold an edge forever, yet I can't find one.

Man, that's strange. But then again, elk certainly aren't whitetail. Much thicker hide, muscle and bone you are dealing with.

The closest thing to something that large I have processed is feral hog. They are very hard on the edge of a knife. If I can get through one of them without resharpening, I feel pretty good about my knife. Those things are built like a Abrams tank.

One thing I've noticed is that infi tends to perform better after a good sharpening or three. I'm not sure why, but my own pet theory is that maybe the heat treatment makes the edge, where the blade is thinnest, a bit softer than the rest of the knife. By removing some of that metal it seems to reach a bit of a harder core. Of course, that is only my silly drunken theory to explain the anecdotal evidence I've accumulated over the years of using infi. I could be way off base and my wife would remind everyone that I'm often wrong. :o

Anyone else seen this? Seems I've read a few other guys writing about a similar phenomenon.

......that is a little Black Fallow doe in the pic ;) Kangaroo is really nice. Not at all like rabbit... :) It is a very dark red meat that does best cooked on a BBQ. It has a strong flavour and is actually very very healthy. Many heart transplant patients get advise to switch to 'Roo for their red meat as it is very in cholesterol.
